ANTIS 2007 – (34% Carmenère – 33% Cabernet Sauvignon – 33% Cabernet Franc )

The grapes for this special bottling come from a winding pattern of particular cuartels on our farm in San Luis where once an ancient river bed flowed. The blend of Cabernet Cabernet Franc and Carmenere has been fine-tuned as have the yields and vineyard work after  several years of research and work with Dirt-Doctor Pedro Parra.

Winemaking note

Once the ANTIS grapes are harvested by hand in 12 kg boxes, they are, destemmed and placed into fermenting tanks. After a maceration of four to eight days, the wine is fermented keeping the temperature under 26ºC. The post-fermentation maceration lasts between two to three weeks, allowing to achieve a better extraction of round Maipo tannins. After malolactic fermentation, the wine is conserved during 18 months in new French barrels from the Radoux & Saury coopers, allowing for greater complexity. This wine is aged for at least another 18 months in the bottle before being released.

Tasting note

On the nose ANTIS has a revered austere complexity of mature black fruits accompanied by coffeee and tabaco. In the mouth the wine has a round full-force attack that is firm and pirsistent full of blackberries and currants. Opening this wine 45 minutes before serving is highly recommended. Drink 2010-2020
